BUFFALO MEAT GENERAL GUIDE LINES

Health experts praise buffalo for its nutritional qualities; it is high in protein and minerals, and low in fat, calories and cholesterol. These qualities make it ideal for people altering their diet for hypertension, heart disease, diabetes, and weight loss. Buffalo meat is very lean and requires a little extra care when cooking. You can substitute buffalo meat for beef in any recipe that calls for ground beef. Ground buffalo is lower in fat than most ground beef and can overcook quickly. For hamburgers, move your grill or broiler rack one level away from the heat; lower the heat when you flip them. Do not squish them.

 

Ingredients:

2 lbs. Buffalo burger
1 cup fine dry bread crumbs
1 tsp salt & dash of pepper
1/2 tsp fine herbs
1/4 tsp of nutmeg
1/2 cup Hickory flavored catsup
3 eggs
1 cup milk
1 cup shredded carrot finely chopped onion & celery to taste

Directions:

     

  • Place in a bowl, bread crumbs, salt & pepper, herbs and nutmeg. Add eggs, milk and beat well. Let stand a few minutes. Gently blend burger, carrot, onion and celery. Spread evenly in 3 x 9 pan; spread catsup evenly over meat mixture. Bake at 350 degrees for 1 hour or until done. Let stand about 5 minutes before cutting.
