Ingredients:
4 Nature's Rancher Boneless Skinless Chicken Breasts, thawed (Always thaw in a refrigerator)
4 Slices of Pepper Jack Cheese
4 Slices of Antibiotic Free Ham
Breadcrumbs (approximately 2 cups)
Sea Salt & Pepper (to taste)
Cajun Seasoning (or other spicy seasoning)
Serves 4
Directions:
- Heat oven to 350° F.
- Wash each breast with cold water and then pat dry with a paper towel.
- Cut a 1 1/2 - 2 inch slit in the thick part of the breast, creating a pocket.
- Add Sea Salt & Pepper to each side of the chicken breast.
- Add a slice of pepper jack cheese along with a slice of ham in each pocket.
- Meanwhile, add 2 cups of breadcrumbs to a bowl.
- Sprinkle in some Cajun seasoning and mix thoroughly.
- Roll each Chicken Breast in the seasoned breadcrumbs and place on an oven sheet.
- Place in the oven for approximately 30 minutes or until the chicken breast reaches an internal Temperature of 165° F and juices run clear.
- Perfect on a bed of steamed asparagus!
